All About Eggs

I absolutely love eggs, but whenever I am a vegetarian, people always question me eating eggs because there seems to be some question about eggs containing underdeveloped chickens... seriously? Let me help you out if you also ask yourself that question. Eggs contain NO chicken. A hen lays one egg a day regardless of whether or not there is a rooster in the coop. So it is an unfertilized egg and contains no chicken. Of course being an ethical vegetarian I do care about where my eggs come from. Whenever possible I buy locally, otherwise I buy from farms I know allow for free range living and good food for their hens. It takes research, but it is worth it not only to get a great egg, but to make sure you aren't getting eggs from a farm keeping their hens in horrible conditions and feeding them garbage.

How do I like to eat my eggs... ugh, with sautéed veggies and cheese. This morning my omelet contained egg whites, sweet orange baby bells, and some Fit & Active shredded cheese from Aldi's. Amazing. I also recently bought this really cool "As Seen on TV" microwave egg cooker that actually works pretty well. You just drop in your eggs, cheese, veggies, and it makes a really nice and fluffy omelet.

So regardless of whether you are a vegetarian or not... don't forget to add some "Incredible Edible Eggs" to your diet.

Now for health purposes, I do want to talk about cholesterol and eggs. Yes, eggs are high in cholesterol, but that is contained in the yolk, which I personally do not like the taste of and do not eat. One large egg contains 186 mg of cholesterol. If you are not diabetic, you can have 300 mg of cholesterol a day with no health risks, however diabetics should limit their cholesterol consumption to 200 mg per day. A Mayo Clinic article said that a healthy, non diabetic person can eat 7 eggs a week with no negative health risks. If you eat just the whites you can eat unlimited amounts because the yoke contains no cholesterol and it is also much less in calories.

Of course I tried explaining this to my stepfather, who has diabetes and consumes a hard boiled egg once a day, which would be okay if he was not a diabetic. I don't know if it's the "I'm 79 years old so... I'll eat what I want at this age" or if it's because this is his routine and he's been doing it for years. You know how those old people (just kidding... kind of) get stuck in their ways.

Fun fact: You always hear "brown eggs are local eggs and local eggs are fresh."  Actually, eggs come in a variety of colors based on the breed of hen.  The color has nothing to do with freshness.  Also, if you ever want to know if your eggs have gone bad, put one into a clear glass of water, they should sink and lay sideways.

Egg yolks have an average of 55 calories while the whites have an average of 16 calories and a whole egg is about 72 calories each.
